'23 Viognier (Orange)
Grapes: Grown by Colorado Vineyard Specialists in Palisade and harvested in mid-September. The grapes were crushed and destemmed, followed by a 3-day cold soak and a 12-day fermentation on the skins, down to about 5° Brix. They were then pressed and transferred to neutral French oak barrels.
Aging: 12 months in neutral French oak, followed by 18 months in stainless steel.
Tasting Notes: Aromas of candied orange peel with creamy, fresh tangerine and marzipan notes. This is an orange wine, which is a white wine fermented on skins.
ABV: 13.5%
Pairs with: Smoked salmon, fatty cheeses, and fruit.
Drink: Now until 2029.
