Grapes: Grown by Colorado Vineyard Specialists in Palisade and harvested in late September. The grapes were crushed, destemmed, cold-soaked for 24 hours, and then pressed. The juice fermented for 30 days in stainless steel and was stirred every 5 days.

Aging: 30 months in stainless steel.

Tasting Notes: Dry and refreshing with notes of pineapple, pear, and honey. This wine has much more depth and flavor than most sparkling wines.

ABV: 13.2%

Pairs with: Charcuterie, potato chips, or fruit—or simply enjoy it by itself.

Drink: Now until…? It’s a sparkler, so it will likely age well.
