Grapes: Grown by Ten Acre Farm in Palisade and harvested in late September. The grapes were crushed, destemmed, and cold-soaked for 5 days, then fermented for 15 days. They were then pressed and transferred to French oak barrels.

Aging: 30 months in French oak—50% new and 50% neutral barrels.

Tasting Notes: Fruit-forward with notes of raspberry jam, dark cherries, and a touch of smoke.

ABV: 15.1%

Pairs with: Red meat, hearty poultry dishes, and stir-fry.
