Grapes: Grown organically at I-Guana Farms in Cedaredge and harvested in mid-October. The grapes were crushed, destemmed, cold-soaked for 24 hours, and then pressed. The juice was fermented for 30 days in stainless steel and stirred every 5 days.

Aging: 29 months in a stainless steel tank.

Tasting Notes: Dry with a spicy aroma and floral grapefruit notes. Crisp, smooth, and perfect for summer.

ABV: 13.5%

Pairs with: Anything spicy! Mexican, Thai, and Indian dishes all work wonderfully.
