‘20 Dolcetto

Grapes: Grown in Palisade by Colorado Vineyard Specialists, harvested in late September. The grapes were crushed, destemmed, and cold-soaked for 6 days, then fermented for 14 days. They were then pressed and transferred to French oak barrels.

Aging: 30 months in French oak, with 25% new barrels.

Tasting Notes: A sexy, spicy wine with overtones of licorice and red currant. Super smooth.

ABV: 13.8%

Pairs with: Pasta with meat sauce, wild game, or strong cheeses.

Drink: Now until 2028.
